Things that make good mexican food,
- Make your own tortillas, the effort to make them isn't massive but the difference in taste is massive, they are so good.
- Some kind of tomato salsa, chutney or pickle is delicious.
- Try rice in your totilla, it's not something we do all the time but it tastes good.
- A good salad: Crispy lettuce, tomato, capsicum, grated carrot, sprouts, cucumber and corn are the usual choices whichever we have on hand.
- Beans beans, good for the heart!
- For your protein its very easy just to slice chicken breast into finger size pieces, toss in seasoning (it would be good to make ourselves but i havent tried that yet) and lightly pan fry. But chilli con carne, or a chicken chilli are also good. A fried egg would also work well.
For the flour tortillas i don't really have a recipe i just do it by feel:
Note: for about 12 tortillas i use 350g flour, water (by feel), a few grindings of salt and 1T. of vegtable oil, adjust quantities of flour and oil around this depending on how many you want to make.
In a bowl i mix flour (i use 50% plain flour and 50% atta flour (an fine wholemeal flour)) ,vegtable oil, salt and then gradually add hot water till its a dough but not sticky, then kneed until smooth, you can adjust by adding more water or flour depending on the consitency.
Then separate into balls about the size of a plum.
Use a floured surface and a rolling pin, first flatten the ball in your floured hands then roll with light even pressure rotating around to get an even circular shape (though it doesn't have to be perfect it's just rustic).
Pile them up (but not too high and make sure they are floured between them or they will stick together) and when you have rolled them all heat up a heavy based saucepan or cast iron wok to cook them in.
No need to oil it but keep it hot (but turn it down if it starts to smoke or burn the tortillas rather than toast) and just cook each one on one side until spots of golden appear then flip and finish to the same golden on the other side. It should be pretty quick on each side, once the pan is up to the right temperature less then a minute in total cooking time. Keep them warm wrapped in a tea towel while you cook the rest.
Sorry this recipe is a bit vague, i will try to check the quantity of water i use to be more accurate next time.
